In this on time class we will make Healthy Ramen Soup from scratch. It is a yummier and healthier way to eat this kid's favorite soup and you can use leftovers in your fridge. This soup has a vegan or vegetarian option. While the chefs are enjoying their creation, we will play a game called Would You Rather with the focus on healthy habits (Food, Mood, Move, and Recharge). Learners will have fun connecting and cooking. If students have fun, they will want to practice healthy habits outside of class. I will teach with positive specific feedback when connecting with the chefs. I will be modeling the activities either in person or with a video clips of myself doing the activities so that I can give lots of feedback during the lesson. We will be participating in hands-on cooking activities. Students will be connecting and cooking! No prior experience necessary. Please note that supervision from an adult or parent is necessary for the cooking portion for cutting, using a stove, and other cooking tasks.
Learning Goals
We will learn basic cooking skills, healthy recipes, while learning why it is important to feed our bodies with good nutritious foods. Getting kids involved in the shopping and preparing meals (and snacks) encourages healthy eating habits. The best part is they will have yummy meal for the whole family to enjoy!

Parental Guidance
Please supervise your child in the kitchen for safety. When working in the kitchen, there are potential hazards, including use of a blender, knife, microwave, stove, and other kitchen tools and/or possible allergens. For safety please supervisor your chef while cutting, using a blender, microwave etc. You may choose to cut up ingredients prior to class.
Supply List
A attachment will be provided of all the ingredients and supplies needed. 3 cups of Low Sodium Vegetable Broth 2 cups of Water 1 pack (2 – 3 oz.) Ramen Noodles or Rice Noodles or Soba Noodles 1 tablespoon of Vegetable or Canola Oil (or an oil of your choice) 1 Clove of Garlic (minced) 1/4 inch Ginger Root (finely minced) 2 – 3 tablespoons of Organic Tamari (start with 2 and then add more if needed. Soy Sauce can be substituted.) A good drizzle of Sesame Oil 1/2 tablespoon of Agave Nectar (Honey is fine for Non-Vegans) 1/2 tablespoon of Chili Garlic Sauce (or Sriracha Sauce) This is optional – if you don’t like it spicy. 1/4 teaspoon of Dijon Mustard (or Hot Mustard) – This is optional – if you don’t like it spicy. 1 medium Zucchini 1 medium Carrot 2 small Bok Choy (cut in halve) 3/4 cup of Mushrooms sliced thin 1 Green Onion (White Part sliced thin – save Green Part for topping) Salt optional Optional Garnish: Fresh Cilantro Green Onions Tops (Sliced thin) Chili Garlic Sauce Kitchen Supplies Needed: • Large Pot with cover • Large Spoon • Measuring spoons • Cutting board • Thongs • Knife (can cut up ingredients before class for safety of younger / beginners) • Bowl for serving/ serving spoon / spoons

My passion is teaching, planning, and coordinating engaging, hands-on, FUN, and meaningful curriculum with emphasis on fitness, health, sport and physical skills, teamwork, and sportsmanship. I teach 250 plus students, PK-8th grade daily at my school in Portland, OR but have Fridays and Summers off for Outschool. I earned a M.A. ED. in Education and B.A. in Physical Education / Health. In addition, earned a teaching credential in Oregon and California. I have been a physical education teacher, health teacher, and coach for 30 plus years. I love connecting with student athletes and love teaching! My real excitement and passion are working with learners and athletes. I look forward to connecting with your child and motivate them to be healthy, happy, and active!
