Gluten Free Baking With Millet (It's Not Just for Birds): Peanut Butter Cookies

Let's bake gluten free cookies! In this class I will walk you through the steps to make yummy chewy gluten free peanut butter cookies, and explain the chemistry that makes this recipe work.

Class Experience

I am a confident and accomplished baker. I bake both with gluten, and gluten free foods three to six times a week.
Your learner will need 
-an oven
-a kitchen scale
-measuring cups
-measuring spoons
-a mixing bowl (with a lid if you have one)
-a microwavable safe bowl
-cookie sheets
-parchment paper
-oven mitts 
-cooling racks
-a spatula to lift the finished cookies from the cookie sheets
-a whisk
-a spatula for bowl scraping
-a reliable timer
-gluten free four blend (we use this millet one from Target: Good & Gather 16oz Gluten Free Flour Blend)
-baking soda
-brown sugar
-granulated white sugar
-creamy peanut butter (commercial like Skippy--all natural peanut butter has too much oil)
-vanilla extract
-chocolate chips or dry roasted peanuts (optional)
2 hours per week in class, and maybe some time outside of class.
Your learner will be using a hot oven
I will be using the peanut butter cookie recipe from America's Test Kitchen, How Can it Be Gluten Free Cookbook Collection. A PDF of the recipe, with a few of my own alterations will be available through the classroom.
