Class Experience

Learners will be taught and walked through cooking a variety of different dishes. I will guide them as they follow recipes to make carmelita’s, chicken and sausage jambalaya, lemon icebox pie, and oven baked chicken nuggets. These are totally hands on lessons. Students will take ownership of the recipes that they make choosing toppings and fillings.

Day 1 is Carmelita’s. Think brownie meets oatmeal bar with a little chocolate and caramel thrown in for good measure. We will measure, mix and bake a delicious dessert bar.

Day 2 is a taste of Louisiana with some chicken and sausage Jambalaya and a little social studies lesson about the Cajuns who settled in south Louisiana. Learners will measure, mix and create a delicious Cajun dish.

Day 3 is a summertime treat that everyone loves. We will make lemon icebox pie. Learners will make their own graham cracker pie crust, juice lemons, measure and mix ingredients and create a light and delicious summertime dessert.

Finally day 4 is chicken nuggets. Who doesn’t live chicken nuggets? I will show learners a way to make them delicious and a little healthier to boot. Learners will cut up their chicken breast, measure, mix and bake some yummy chicken nuggets.

My teaching style is relaxed. I want to encourage children to think creatively and foods that they will love to eat and be proud to share with friends. It is my goal that students will feel comfortable enough after cooking with me that they can recreate the recipes on their own, without the need of my guidance.

Students will learn proper technique for measuring ingredients, preheating the oven, creating different foods from recipes. We will also discuss diverse cultures as we create an authentic Cajun delicacy. We will talk about the origins of some of our favorite ingredients.

There is no better application of STEM (science, technology, engineering and math) than through cooking and baking.

We will discuss the science behind the way some foods are made. We will use a variety of kitchen equipment and discuss possible solutions of substitutions of equipment and ingredients. We will use math skills when measuring using standard and nonstandard measuring tools.

I have videos and power point presentations to help illustrate the steps to making the recipes I share. No prior knowledge of cooking is required for this camp. It is my hope to teach good cooking habits from the outset of the class.

Day one week one we will learn to make carmelitas from scratch. Think about a brownie meeting an oatmeal bar and throw in some chocolate chips and caramel and you have a carmelita. Next we will taste a little of Louisiana with chicken and sausage jambalaya. The next day we will make a summertime treat that everyone loves, Lemon icebox pie. Finally, who doesn't like chicken nuggets? I will show you how to make them delicious and a little healthier as well.

I am not a trained chef, but I have been working in the kitchen since I was old enough to stand up on a bar stool and see over the counter. I cook most everything I make from scratch and I love to share my recipes with young learners. I do not cook along with learners. I walk them through following recipes so that I can focus my total attention on learners.
