Funfetti Ice Cream Sandwich Cookies (No Ice Cream Machine Required)

Who says homemade ice cream needs to be difficult? Amaze your family with the most delicious ice cream pie that even a beginner can master. During this one-time class, we will make ice cream with no ice cream machine.

Class Experience

The best way to learn is to do! Kids learn by following along as I cook step by step. I love to cook, and I love sharing that passion with my students. This is such a fun class, and such a delicious dessert. I encourage students to ask questions throughout the class. Your child will gain confidence through practice, and the skills learned in this class will help them so much in life. 

We will make ice cream without an ice cream machine or using an oven. This is a great class for beginners, but it's also a fun and delicious challenge for advanced bakers as well. 

Due to the nature of this recipe, students will finish assembling the cookies after class. They will make the ice cream and get it in the freezer. We will also make the cookies. After the cookies have cooled and the ice cream has a chance to set a little, they will assemble the sandwiches on their own after class. They do not have to make them into sandwiches if they'd prefer to serve it like a ice cream sundae in a bowl. 

The class will begin with classroom expectations and instructions. We will do introductions. I will instruct the class on kitchen safety and hygiene before we get started. We will make sure that we have all the supplies and ingredients ready to go before we start cooking. 
Students will follow along and cook with me as I demonstrate the recipe for the ice cream. They will be encouraged to ask questions, and I will share important cooking tips throughout the lesson to help improve their knowledge while we work.

Kitchen skills are an essential life skill, but kids also learn so much about math and reasoning through baking as well. Students will need to measure wet and dry ingredients during the class. Cooking is such a fun educational activity. I choose cooking projects for my classes that do not require lengthy ingredient lists or hard to find specialty items.

Students will work on one of the most important life skills of all - cooking. They will learn about food safety and hygiene. Students will learn cooking tips. Students will practice measuring wet and dry ingredients.

Parental Guidance
This is a beginner cooking class. We will be using the oven. We will be using an electric mixer. Some learners might need assistance with this task. This recipe may contain ingredients not suitable for children with allergies. If your child has a food allergy, please read over the ingredient list. This recipe contains dairy.
Supply List
Here are the supplies and ingredients needs for this recipe. 


It is highly recommended that students use an electric mixer (either stand or handheld) since we will whipping the heavy whipping cream. They will need a mixing bowl (or the mixing bowl that comes with the stand mixer). We will be using the whisk attachment for the stand mixer. Students will need a spatula, whisk, and measuring spoons and cups. 
Cookie sheet with parchment paper, extra mixing bowl with cooking spoon, whisk and spatula, 

One 14-ounce can sweetened condensed milk (NOT EVAPORATED MILK)
Vanilla extract
2 cups heavy cream 
salt
2 teaspoons of vanilla extract
1 teaspoon of almond extract
1/2 cup of sprinkles
1 box funfetti cake mix (you can also use another cake mix flavor if you'd like)
extra sprinkles (optional)
loaf pan for freezing the ice cream (you may use another container)
plastic wrap
2 eggs
1/3 cup canola or other cooking oil
