Class Experience
Demonstrate an understanding of food and nutrition-related issues at different stages in the lifespan; Demonstrate an understanding of the relationships between nutrition, health, and disease; Demonstrate an understanding of current American trends and patterns in nutritional guidelines and in food production and consumption; Define food security and explain the key components of it Understand the factors that impact food security including availability, accessibility, adequacy, sustainability, etc. Discuss how poverty, food insecurity, and nutritional status relate Explain how food security is impacted by various food distribution systems Discuss strategies that would help combat food insecurity both at the local and global level
As dietitians, we have worked with and cherish diverse food cultures and traditions. In the past, much emphasis has been placed on our cultural competence—our ability to understand as well as communicate and interact with people across cultures. We have gone through various training to understand foods in different cultures and the level of food security from country to country.
Learners will receive weekly homework and various handouts throughout this course

Learners will not need to use any apps or websites beyond the standard Outschool tools.
1 hour 40 minutes per week in class, and an estimated 1 - 2 hours per week outside of class.
