Food & Kitchen Safety: Preventing Food-Borne Illness - From Farm to Table
Learning food safety science enables learners to better understand decisions and practices that may affect their personal health. It will encourage them to step up to the plate and take an active role in preventing foodborne illness.

(Question, Research, Hypothesis, Experiment, Observations, Conclusions, Share Results) We will do activities and labs covering this broad range of topics: Bacteria, including Foodborne Pathogens Proper food storage and handling Pasteurization Technology The Science of Cooking a Hamburger DNA Fingerprinting Outbreak Analysis Learners will get printables that they can hang on the fridge or in a kitchen cabinet so they can refer to the information later. I will send printables before the class. This is a highly interactive class. Learners will read directions, and I will ensure that they are followed correctly so that their results are accurate. We discuss HOW and WHY each exercise works, and how to apply what you've learned to future exercises. I provide worksheets for learners to fill in. I will also provide various other handouts related to the class materials. Occasionally, there are PowerPoint/slides to show data, examples, or emphasize points. Learners are encouraged to ask questions and do further experimentation after the class. I will always stick around for Q&A when the time slot ends. • I may use photos, slides, and video clips for clarification. • Learners must be able to understand basic math, simple fractions, thermometers/temperature. Note: Depending on the number of learners, this class duration may vary by ±10 minutes, so a bit of scheduling flexibility is desirable. - I'm adding more classes constantly! • Parental supervision is essential for safety. ALLERGY STATEMENT: We may use food in these classes. Lessons may call for items that include common allergens such as Dairy, Eggs, Fish, Shellfish, Tree Nuts, Peanuts, Wheat, and Soy. If the learner has dietary restrictions, please contact Chef JoAnna and she may be able to suggest ways to adapt the recipe, typically by substitution, or omission of the allergen. (Requires at least 48 hours' notice.) Not all recipes can be adapted. Chef JoAnna does not have the ability to ensure that the items you purchase will be completely free of allergens. It's up to the adults responsible for each learner to ensure that products brought into the learners' kitchens are allergen-free. To ensure an interactive, safe learning environment, I request all students have a working camera and microphone, and that they are left on for the duration of each class. If this isn't feasible for one reason or another, a parent should contact me ahead of time to let me know. I am happy to work with each student to make sure they feel comfortable!
