Class Experience

US Grade 7 - 9
Beginner - Intermediate Level
The flexible schedule (Flex Class) allows your learners to watch the pre-recorded videos and do them at a time that is FUN for them! You can also spend extra time on the topics your child is most interested in. Since this is a flex class with no live meetings, students can log in at a convenient time to complete the week's lesson. We will be going through each week as a group and I will post the lesson weekly (depending on which day you started).

In this 4-week, 5-part flex class the professional chef teacher will show how to make 2 different types of pastry and four different fillings to make the perfect tart dessert. 

I will show all the required information needed to understand the best way to cook/bake the perfect tart dessert. After learning how to make two types of pastry, the student will then film or photograph themselves baking the tarts for the homework which will be sent back weekly. These videos will then be commented on by the teacher and used in a discussion for the group. After watching each video and completing the homework assignments, students will be provided with feedback and the specific next steps to make their tarts even better. The students will then share their videos/projects for the other students to watch and comment on. This will allow the learners to help each other and share ideas and thoughts about each show. Sharing these projects will allow other students to learn from each other. 

There will be a competitive game at the end of the course to see who can come up with the most creative tart of their own design, this will be voted on and commented on by the students to see who wins the challenge. This is designed to cause interaction between the students.

Time-frame for the Week:
Saturday - The teacher will post the video for the week.
Sunday - The teacher can answer any questions from the students regarding the tricks in that week's lesson.  The students will need to complete the homework and submit the video.
Wednesday - Students need to have all tasks completed and uploaded in the classroom.  
Thursday - I will provide feedback to the students about the homework. Students will also be able to take part in a student to student comments and reviews on the tricks they learn and videos to be able to discuss how they best perform them with each other. 
Friday - I will be available for questions and feedback.

Pate Sucre
chocolate Shortcrust

Topics in session 2 will include: 
Lemon meringue tart

Topics in session 3 will include: 
Chocolate ganache tart

Topics in session 4 will include: 
Strawberry and White chocolate crème Patisserie tart

Topics in session 5 will include:
Revisiting the tarts you have previously made and learning some extra techniques

No required experience or previous knowledge is needed by the learners.

Syllabus

4 Lessons
over 4 Weeks
Lesson 1:
Perfecting Pastry Foundations
 Discover two essential pastry types: Pate Sucre and Chocolate Shortcrust. Watch the instructional video, then practice making these bases for your tarts. 
Lesson 2:
Chocolate Ganache Tart
 Dive into the rich world of chocolate as you learn to create a silky smooth chocolate ganache tart, a classic favorite among chocolate lovers. 
Lesson 3:
Strawberry and White Chocolate Crème Patisserie Tart
 Combine strawberries and white chocolate in a crème patisserie filling, crafting a tart that balances tartness and sweet, creamy flavors. 
Lesson 4:
Bakewell Tart
 Explore the traditional Bakewell tart with its layers of jam, frangipane, and a feathered icing topping, learning the techniques for this British classic.

500g flour
300g butter - cold
30g icing sugar
80g caster sugar
30 g ground almonds

35g cocoa powder
1/2 tsp baking powder

Week 1 day 2:
100ml milk 
300ml double cream 
400g 70% cocoa dark chocolate
90g butter - room temp
salt
50g caster sugar

Week 2:
92g egg yolk
36g corn starch
579g whole milk
293g white chocolate
large punnet strawberries
50g granulated sugar 
50ml water
star anise
cinnamon stick

Week 3:
4 egg yolks - large
100g caster sugar
200ml lemon juice - about 6 large lemons
90g butter - room temp
zest of 1 lemon
200g granulated sugar
4 large egg whites

week 4:
Raspberry/strawberry jam - your choice
150g butter
150g caster sugar
3 eggs 
1 egg yolk
150g ground almonds
