In this cooking class, I will be teaching your children how to make roasted corn, Mexican style. This is a very popular street food in Mexico and you can make this right in your kitchen or even grill this in your backyard. Preheat oven to 400 INGREDIENTS: 4 ears of corn 3 tbs. butter 1 tsp. chipotle power or 1 tsp. chili power or 1 tsp. smoked paprika 1/4 cup mayonnaise 1/4 cup cilantro 2 ounces COTIJA cheese (Mexican cheese) OR WHOLE parmesan cheese (not pre-shredded or grated) 1 lime EQUIPMENT: Basting brush Aluminum foil Metal oven pan or a Cookie Sheet Wooden or Metal Skewers Mixing Bowl Kitchen Knife Cutting Board Grater or microplane Plate for serving and presentation
