Croque Madame Pour Dîner! Making a French Lunch!
Class experience
Un sandwich needn't be rushed and can be a repas (meal) all in itself. We will learn to make the classique Croque Madame for our French lunch. We will start with a roux for la béchamel or choose instead to turn to la sauce mornay and after assembling we can decide to griddle or bake our stack before finishing with our choice(s) of either a poached or fried oeuf (egg). By the time this class is done we will have learned alternative ways to prepare a most flavorsome dish. Recipe sheet will be...
I started experimenting in the kitchen as a child and have in the years since become skilled and proficient in the culinary arts. I have decades of experience in the kitchen cooking a myriad of meals and baking many desserts for myself, family, friends, and co-workers. I've often shown others how to reproduce their favorites. I am inspired by how basic ingredient combinations can be transformed into fun and innovative dishes.
Brioche Butter Flour Milk and/or Cream Ham Gruyère or Emmentaler Cheese Parmesan Cheese Eggs Nutmeg Salt & Pepper Optional: Chives for garnish Optional: Mixed greens for a side salad
This class uses a hot stovetop and oven/broiler. We will be using knives and a cutting board for chopping and slicing, and, possibly, a cheese grater. Parental supervision is strongly encouraged. A mise en place (put in place) ahead of class will help keep learners organized (though there will be time allotted to gather ingredients and we will be prepping them during class). We'll be needing skillet/fry pan(s) and saucepan/pot(s), an oven dish or sheet will be used as well as mixing implement(s) and/or spatula and/or wooden spoon, and oven mitts. A few bowls for readied ingredients and trimmings. Having kitchen towels handy to clean our workspace as we go or in case of spills is always a good idea.
