This class is designed to prepare students to become pie bakers. Students will learn to measure liquid and dry ingredients, how to "cut-in" shortening to a flour mixture to make pie crust and crumbs, how to roll out a pie crust and how to prepare pie fillings. Students are encouraged to prepare their own pies during the teacher led demonstration. Students will learn how to measure ingredients, how to cut-in shortening to a flour mixture, and how to prepare and roll out a pie crust. Students will learn how to prepare pie fillings for a pumpkin, pecan and apple pie. Students will learn how to make a crumb topping when making the Dutch Apple Pie. Students will gain confidence in their baking skills.
I am a Career and Technical Education teacher, Family and Consumer Sciences. I have taught foods classes, both cooking and baking, to students of all ages, from elementary school students to adults. I have taught in the classroom, at summer camps and online. Most importantly, I love cooking, especially baking. I have been baking since I was very young, with my mother and grandmother. I enjoy sharing my joy and experience with students.
Students will be asked to sample their dish, clean up after themselves, and thank the adult who assisted them.
The recipes, which include the ingredient listing, will be sent to students after enrollment. Kitchen equipment that the student will need is: 9" pie pan; liquid and dry measuring cups and spoons; mixing bowl; mixing spoon; pastry cutter or 2 knives; apple corer/slicer or sharp knife and cutting board; vegetable peeler.
1 hour per week in class, and maybe some time outside of class.
Parental/adult guidance is suggested as students will be using the oven to bake their pies and sharp knives to cut the apples into slices. (Apples can be sliced in advance by an adult for students who are uncomfortable using sharp knives.) This recipe uses butter to make the pie crust and the crumbs. (A non-dairy margarine could be substituted.) Pecan Pie has nuts. Dutch Apple Crumb Pie has walnuts in the crumb topping but these can be omitted for those who prefer no nuts.
