In this class, students will follow along with me as they learn step by step how to make a refreshing dessert using Tapioca, Coconut milk, and fruit of their choice. (Mango, banana, blueberries, diced pineapple, peaches).

Class Experience

Mangos, Mangos,  Mangos!! As I  type this, a gigantic Haden mango tree waves beautifully outside my sunroom.  I love fresh mangos, but even better, I absolutely love mangos drenched in sweetened coconut milk and tiny tapioca balls. In this class, students will follow along with me as we cook this refreshing coconut cream tapioca pudding. This cool dessert is wonderful for a hot summer day!    

Students together with their classmates will:
1) Learn how to cook Tiny Pearl- Tapioca (This is not Tapioca Granules that are used for Pudding, but tiny little pearlized balls, somewhat like Boba, but this tiniest version of them. 
2) How to properly drain  off and cool  down  cooked Tiny Tapioca Pearls (parents please supervise) 
3)  Cream together coconut milk and sweeteners
4)  Dice or cut  fruit for this  dessert
5) How to layer fruit and tapioca in a clear dish/cup to create a  beautiful dessert

Please note: TINY Pearl Tapioca can sometimes be very difficult to find, please do not wait until the last moment to purchase this crucial ingredient. Often times students have only found this product online, I buy mine from AMAZON in bulk! 

All ingredients for this dessert will be prepped during class, although this dessert is delicious in its somewhat watery state, like Jello, this tapioca dessert will need to be chilled in the refrigerator 5-12 hours before assembling, I will be demonstrating how to do this in class. 

This class is inclusive, which means students of all abilities are welcome. If your student needs any accommodations please let me know and we will work together to ensure that they have the best possible class experience.

Parental Guidance
Parents, please be advised a hot stove will be used in this class. Parents, please be ready to assist your child when draining the cooked Tapioca Pearls. Allergy Alert: Please take note that coconut nut milk and mangoes are used in this class.

1 cup "Small Pearl Tapioca" I would highly suggest ordering this tiny tapioca online via 
Amazon: Tapioca Pearl, Sa Gou, Tiny Balls, White, 14oz 

Imitation Vanilla
1-2 cans FULL FAT Thai coconut milk:  Please purchase full-fat canned coconut milk. 
We want that “thick” heaviness of coconut milk fat to blend with our cooked tapioca. 
Some coconut milk brands are watery because they have strained out the fat. We-want-the-fat in this tropical dessert! 

Often the best brands are the “Thai brand”  coconut milk.
Honey
1 RIPE Mango or another fruit: I have used this with delicious success: Bananas, Blueberries, Raspberries, Strawberries
 A MUST HAVE TOOL for this class: Fine mesh steel strainer (Costco currently sells a 3 pack for under $15 dollars 8/14/2020) to drain cooked tiny tapioca pearls

I was born and raised, and still reside on the beautiful island of Oahu in Hawaii. I have over 25 years of experience teaching children via homeschooling four children, hosting homeschool Co-ops at my home, and teaching within the private and public schools on our island.
