Class Experience

By the end of the class students will be able to: discuss kitchen safety, dice vegetables, cook a wonderful heart healthy soup to share, and explain how they made a healthy dish from fresh ingredients.
I am offering this class as a healthy introductory class for older students to begin cooking meals from scratch. I have been cooking, baking and feeding people my whole life. After having a heart transplant several years ago, I have committed to studying nutrition. My cooking focuses on foods that are whole, natural, and heart healthy for my family.

A recipe with specific amounts of ingredients will be provided to all learners upon enrollment. Ingredients: chicken stock, 2 raw chicken breasts, olive oil, onion, garlic, carrots, celery, poblano pepper OR small can of diced green chilis, salt, pepper, diced tomatoes (raw or canned), tortilla chips of your choice. Optional: canned black beans and/or canned corn. Optional toppings: cilantro, lime, avocado, cheese. Equipment: 1 big pot (3 quarts or larger), long heat resistant spoon for stirring soup, chef's knife, and cutting board, colander, can opener if needed, 2 small bowls for cut ingredients.
In addition to the Outschool classroom, this class uses:
55 minutes per week in class, and an estimated 0 - 1 hours per week outside of class.
This is a cooking class that involves the use of knives and a stovetop. Because of the dangers involved parents must be present in case of accidents, but not on camera for the class. The live class will take the students from the preparation through the completion of the dish.
