Class Experience

Day 1- Learn the basics and history of Chocolate Chocolate covered strawberries and chocolate ganache Ingredients: Small box of strawberries, 1 Cup of heavy cream,( 1.5 bags of semi sweet milk chocolate morsels nestle or Ghirardelli sells them 24oz) Equipment: silpat baking mat or parchment paper, offset spatula aka icing spatula, chocolate molds, heat safe mixing bowls, small sauce pot, small scoop (cookie or ice cream scoop), measuring cups Day 2- Learn how to work with cold chocolate Cold chocolate ganache for truffles and warm for coating Ingredients: Leftover chocolate from 1st class, 1/2 cup heavy cream, 1 24oz bag of semi sweet milk chocolate, coconut flakes, cocoa powder, chopped nuts of your choice, toppings of your choice Equipment: silpat baking mat or parchment paper, offset spatula aka icing spatula, chocolate molds, heat safe mixing bowls, small sauce pot, small scoop (cookie or ice cream scoop), measuring cups Day 3- Learn advance techniques on how to make chocolate bars and mold chocolate (* Highly recommend buying chocolate molds on amazon for this) Chocolate assortment and chocolate bar with almonds Ingredients: 1 small bag of each White and black chocolate melting wafers, chopped nuts of your choice or almonds. Equipment: silpat baking mat or parchment paper, offset spatula aka icing spatula, chocolate molds, heat safe mixing bowls, small sauce pot, small scoop (cookie or ice cream scoop)
4 hours 30 minutes per week in class, and maybe some time outside of class.
