3 tbs cooking oil 1/2 medium onion, diced small 1 red bell pepper, diced small 2 medium carrots, diced small 1 tbs. minced garlic 1 cup frozen peas, drained 1 tbs minced ginger 4 cups day-old cooked rice 2 eggs, beaten 1/4 cup water 2 tbs soy sauce 1 1/2 tsp sesame oil salt and pepper 8 chicken thighs, boneless, skinless (5 oz each) 1/2 cup soy sauce 1/2 cup sugar 1/2 tsp minced ginger 1 tsp minced garlic 2 tbs mirin 1 1/2 tsp cornstarch EQUIPMENT 1 12" saute pan cutting board chefs knife 8x8 oven safe dish 1 medium pot 1 rubber spatula measuring cups and spoons 2 serving platters
