Class Experience
I encourage kids to have a hands-on learning experience with my cooking classes. I would love for them to cook step by step with me so they gain the knowledge and experience while being able to taste their end product each and every class. My teaching style is a positive reinforcement style, where I encourage questions and comments. I complete each lesson with a wrap-up page, where we review the cooking terms we learned that day. In this 3 day camp, learners will cook 3 pumpkin recipes from start to finish. Students will learn how to work safely with a stovetop, proper knife skills, how to make homemade pasta, and how to use an immersion blender or standup blender. They will learn different cooking styles and terms such as simmer, saute, boil, and more.
I have been working as a kids enrichment teacher for the last 3 years. I love teaching children and allowing them to create and think outside the box. I have a 9-year-old son who is on the Autism Spectrum, so am a very patient and understanding teacher. I realize all children learn differently and it is imperative to really listen to each child in order for them to feel secure and safe.
Day 1- Pumpkin Gnocchi 2/3 cup canned pumpkin puree 1/2 cup ricotta, full fat 1 1/4 cup all-purpose flour, plus more for dusting 1/3 cup parmesan cheese, finely grated 1 egg 1/4 tsp salt Black pepper Sage Butter Sauce: 1 tsp olive oil 4 tbsp butter 20 fresh sage leaves skillet 2 bowls large wooden spoon fork knife rolling pin stockpot measuring cup and spoons plate spatula Day 2- Pumpkin Soup with Parsley toasted croutons 6 cups chicken stock 1 1/2 teaspoons salt 4 cups pumpkin puree 1 teaspoon chopped fresh parsley 1 cup chopped onion 1 tbsp cumin 1/2 teaspoon chopped fresh thyme 3 cloves garlic, minced 1/2 cup heavy whipping cream ⅛ tsp pepper ½ tsp garlic powder ¼ tsp red pepper flakes (optional) 3 ounces ciabatta or other country-style bread, small dice (about 3 cups) 1/4 cup minced fresh Italian parsley 4 tablespoons salted butter (1/4 stick) 1 tablespoon olive oil salt stockpot cutting board knife spoon measuring cups and spoons saute pan spatula immersion blender stove Day 3-Pumpkin ravioli with a parmesan cream sauce 12 wonton wrappers 1 cup pumpkin puree (not pumpkin pie filling) 1 egg, beaten 1/2 teaspoon ground nutmeg 1/4 teaspoon ground cinnamon pinch salt 1/4 cup pine nuts (omit if nut allergy) pinch pepper For the sauce: 2 cups heavy whipping cream 1/2 cup grated Parmigiano Reggiano cheese 1 teaspoon garlic powder 1-2 tablespoons flour (depending on how thick you want the sauce) 1 tablespoon olive oil or butter salt and pepper, to taste Stockpot Slotted spoon 2 bowls Measuring cups and spoons Fork Spoon Skillet Spatula Whisk plate
2 hours 45 minutes per week in class, and maybe some time outside of class.
Kids will learn safety around the stove and how to properly read and understand following a recipe while preparing a delicious meal that is guaranteed to impress. We will work on measurements, cooking terms, and why following directions while cooking is imperative. When stove work is done, if your learner is younger or not experienced in the kitchen, parental guidance may be needed. We will be doing a shallow fry for the chicken parm. I will discuss safety measures before we do anything but again if your learner is inexperienced in the kitchen, they may need some assistance.
