In this one time course, we will read “The Tree Lady” by H. Joseph Hopkins. We will learn about the important work of Kate Sessions and work together to make homemade fruit roll-ups. Remember, most of the fruit we eat comes from trees!

Class Experience

In this course, children will learn about the life of Kate Sessions, a woman who always had a passion for nature and created a number of beautiful gardens and parks. While I read the story, I will ask the children to share different connections and relate Kate’s experiences to their own lives. Afterward, I will show them how to make homemade fruit roll-ups step by step. Parental supervision is required when they put their treats into the oven to cook.

Learning Goals

In this course, I want children to gain an appreciation for nature. I also hope that they get inspired by a woman who had a passion for gardening and took a stand to help her community.

Parental Guidance
-the use of an oven to cook our yummy treat (I would like parents to be present when the food needs to go into the oven) -a knife to cut the strawberries (a cutting knife isn’t necessary, just a regular one) -you’re welcome to use a different fruit if your child is allergic to strawberries...any other fruit would work; applesauce is the only other food ingredient and it’s gluten free

I will provide the book. Here’s a list of supplies & ingredients that the kids will need to make their yummy treat:
1) strawberries (2 cups)
2) applesauce (1 cup)
3) food processor 
4) parchment paper
5) 2 baking/cooking sheets
6) knife 
7) cutting board (optional)
8) scissors
