Baking with Yeast: Make New York Style Bagels
Class experience
In this class, students will learn how yeast works and how to use it to make baked goods. Yeast does take some time to proof, so this class will be structured over 2 days in a row, as follows: Day 1: Learn about yeast and the recipe, make our dough! Dough will rest in the fridge overnight. Day 2: Shape bagel dough, boil bagels, and bake! Students will learn what yeast is, how it works, how to use it properly, and how to make bagels (New York style) at home from scratch.
I teach high school culinary arts, this is a recipe we use in class and the students love! It's a great New York Style bagel recipe that is easy to make and is a good introduction to using yeast.
Our recipe ingredient list: 2 teaspoons active dry yeast (1 packet) 4 ½ teaspoons granulated sugar 1 ¼ cups warm water (you may need ± ¼ cup /60 ml more) 3 ½ cups bread flour or high gluten flour (will need extra for kneading) (all purpose flour can work as well) 1 ½ teaspoons salt Optional Toppings: Caraway seeds, cinnamon sugar, coarse salt, minced fresh garlic, minced fresh onion, poppy seeds, sesame seeds, or a mix of your favorite flavors. Equipment: Mixing bowls, measuring cups, measuring spoons, liquid measuring cup, thermometer (optional but helpful), mixing instrument (wooden spoon or rubber spatula), baking sheet, oil or parchment paper, pot for boiling water, slotted spoon/spatula/spider, timer
Learners will not need to use any apps or websites beyond the standard Outschool tools.
