I have been cooking since I was old enough to push a chair up to the stove. I have fond memories of my mother reading this book to me each year, and then baking with me afterward! I have a lifelong love of all things culinary. I have many years of professional baking experience, as well as two years of working at the elementary level. I have been completely gluten free since the age of eight, so I have decades of experience with gluten-free cooking and baking.
Ingredients: 2 cups flour (or 2 cups of cup-for-cup gluten free flour, such as Bob's Red Mill), 1 cup Sugar, 1 ½ teaspoons baking powder, 1 teaspoon Salt, ½ teaspoon baking soda, ¼ cup Butter, with salt, 1 Egg, ¾ cup Orange juice, 1 orange, 1 ½ cups golden raisins, 1 ½ cups Cranberries, raw, 1/2 cup pecans (optional), nonstick spray. Baking gear: 1 loaf pan or muffin tin with muffin liners, large mixing bowl, spoon, food processor or blender, measuring cups, measuring spoons, zester or grater, oven mitts.
Parents need to be with the students in order to assist them with the chopping, stirring, and anything involving the oven.
