Bread Pudding Ingredients: Nonstick cooking spray 1 tbsp ground flax seed 4 cups cubed day-old gluten-free bread (about 1/2 loaf) 2 cups vanilla coconut milk 1/2 can (15 ounces) pumpkin puree 2 tbsp maple syrup 1/2 cup sugar or coconut sugar 1/3 cup vegan chocolate chips 2 tbsp melted vegan butter 2 tsp vanilla extract 3/4 tsp cinnamon 1/4 tsp salt Salted Caramel Sauce Ingredients: 1 tbsp arrowroot starch 1/3 cup soy or coconut milk creamer 1/4 cup brown sugar (the darker the better) 2 tbsp & 2 tsp brown rice syrup 1 tsp vanilla extract 2 pinches of salt Tools/Utensils: oven stove measuring cups & spoons pot/saucepan whisk baking sheet baking dish (like a casserole pan) large mixing bowl Aluminum foil
