Baking Banana Bread Muffins with Crumb Topping

In this one time class we will make Banana Bread Muffins with a crumb topping. These are a family favorite in my house! My kids prefer these over banana bread with chocolate!

Class Experience

In this class we will go step by step to mix these muffins, the crumb topping, and bake them.  These muffins are so delicious and do not last long in our house! 

These muffins can be baked in any size muffin tin. Silicone or aluminum muffin tins.  I prefer to bake mine in a silicone mini muffin tin without liners, but I strongly recommend using muffin tins in the aluminum muffin tin.

Basic steps we will follow:
1. Clean workspace 
2. Mise en place (Gather ingredients)
3. Add ingredients and mix
4. Scoop into muffin tin
5. Add crumb topping
6. Bake
7. Check doneness with toothpick
8. Remove from oven and cool
9. Clean up workspace

Parental Guidance
Please note that this class requires an oven so adult supervision is strongly encouraged. There will also be a knife needed to cut the butter in preparation which can be done ahead of time Please also note that this recipe contains butter (dairy), eggs, and flour all of which contain common allergens. You are welcome to substitute these items if you have a substitute that you use in your home for these items in other baking recipes. I will do my best to guide you if you message me in advance so I can be prepared without holding up the rest of the class. The melted butter or eggs in the muffins can be substituted for applesauce, and the butter (not melted) in the topping may be substituted with a butter substitute like vegan butter.
Supply List
Large Mixing Bowl (for mixing muffins)
Small Bowl (for topping)
Muffin pan (metal or silicone are fine and any size of muffin: mini, standard, etc.)
-muffin liners (paper or silicone) if using a metal muffin pan
Fork (or sturdy whisk)
Spatula or spoon
Small metal spoon (can also save a dish and use one of the measuring spoons)
Scoop slightly smaller than muffin cup (optional)
Oven
Oven Mitts
Measuring spoons and cups: 
-1/4 teaspoon
-1/2 teaspoon
-1 teaspoon
-1 Tablespoon
-1/4 Cup


-Ingredients-
3 overripe bananas (can bake bananas in a preheated oven at 350°F for 10 minutes then cool completely before handling)
3/4 C sugar
1 egg lightly beaten
1 tsp vanilla
1/3 C melted butter (can substitute with 1/3 C applesauce)
1 1/2 C flour
1 t baking soda
1 t baking powder
1/2 t salt
1 tsp cinnamon
-Topping-
1/4 C brown sugar packed
2 T flour
1/4 t cinnamon
1 T butter
 1 file available upon enrollment
