Students will make cheesy, savory gougeres OR chocolatey, sweet gougeres (I know, chocolate gougeres are technically not gougeres, but baking is in the eye of the beholder...). They'll leave class with 20-24 pastry puffs! In this class, we will first go over the basic technique for making gougere pastry dough, and then will put this into action. Students will learn to pipe dough onto baking trays, and while the gougeres bake, they'll prepare a chocolate dipping sauce. In this class, learners should come with a basic understanding of baking tools, including stovetop and oven operation. They should have some background in baking, but all levels are welcome and instruction will accommodate for these disparate experience levels.
Learning Goals
Students will learn to create a gougere pastry dough and basic piping techniques. They'll also explore the difference between savory and sweet pastries.

Parental Guidance
Parents should trust their students in the kitchen, or provide supervision. Though we won't require sharp objects for this class, using stoves and ovens comes with risk, and parents should be prepared to provide any necessary supervision during the class that cannot be offered virtually.
Supply List
We will require the following ingredients: 4 tablespoons/57 grams unsalted butter (1/2 stick butter) ½ teaspoon fine sea salt ⅛ teaspoon cayenne pepper (optional, other spices welcome) 1 cup/136 grams all purpose flour or bread flour 4 large eggs, at room temperature 8 ounces/142 grams shredded Gruyère, cheddar, parmesan, mozzarella (the type that comes in a package, not fresh), or other hard cheese (many options here - please message me for substitutes) Supply list: 1 plastic bag 1 small or medium sauce pan 1 mixing bowl 1 cookie sheet/baking tray (2 if you only have small ones) parchment paper wooden spoon whisk cutting board & small knife measuring cups & spoons
