Class Experience

Students will make cheesy, savory gougeres OR chocolatey, sweet gougeres (I know, chocolate gougeres are technically not gougeres, but baking is in the eye of the beholder...). They'll leave class with 20-24 pastry puffs!

In this class, we will first go over the basic technique for making gougere pastry dough, and then will put this into action. Students will learn to pipe dough onto baking trays, and while the gougeres bake, they'll prepare a chocolate dipping sauce.

In this class, learners should come with a basic understanding of baking tools, including stovetop and oven operation. They should have some background in baking, but all levels are welcome and instruction will accommodate for these disparate experience levels.

Learning Goals

Students will learn to create a gougere pastry dough and basic piping techniques. They'll also explore the difference between savory and sweet pastries.
